Bubbles & Co
Business partners and long time friends, Jason Searle & William Downie are the brains behind this fun & quirky brand of bubbles projects. Bubbles & Co is about great bubbles at a loveable price with a lean more in the direction of Prosecco than to Champagne. The brand is concept-based, not vineyard based. Much like the Save Our Souls label, Bubbles & Co is about freshness & integrity at mid-week consumption pricing.
The beginning of the project was a barrel tasting of Chardonnay. The 2016 harvest in the Yarra Valley had delivered some Chardonnay fruit from the vineyards at Coombe Farm, which came with verve and backbone. Whilst looking through barrels in the cellar later that year it became evident to Jason & Bill that some portions were shaping up to be great building blocks for sparkling wine: the acid was razor like
and the fruit very linear. It was clear some texture and body was required on the fine Chardonnay frame. Whilst the Chardonnay sat on lees, attempting to put on weight, along came the 2017 fruit from the Merbein property of the Chalmers family.
The complement was uncanny. The Vermentino provided the bass notes for bubbles perfectly. Characters of straw and apples from the Vermentino were a great bed for honeydew melon and citric character of the Chardonnay. The broadness of the Merbein fruit countered the linear like elements of the Yarra.
Bubbles and Co NV is wine with a vibrant mousse and delivers a nose of wet straw and honey. The lively palate is complex with plenty of mid weight apple skins and honey dew melon, and texture from the secondary ferment of baked brioche. This is followed with lower notes of baked apples and hazelnuts and before a cleansing citric lime pith finish.
